What if I was done a tour in Iraq and I got sick of being stateside, could I ask to be deployed with another unit?

You can put in a DA4187 to be re-assigned to another Brigade that's deploying from your current post or yes you can call your branch manager (found through HRC) and see what they can do for you. Depending on how long you've been with your current unit or assigned to your current station you may or may not be able to PCS.
I'm headed up to 2nd ID here in a couple months and I plan on dropping a 4187 to get attached to the next brigade out the door to the 'Stan. Good luck bro!

you can request to deploy with any unit, you will have to request to change units through your current command that being said 90% of the time you won't be able to change units to deploy that may vary depending on where the unit you are trying to deploy with is stationed

I'm not sure how it works in Active Duty, but in the National Guard you can extend your deployment many times. I've known a guy who extended to the max. I'm not sure how long exactly, but it was something like 3 or 4yrs overseas.
You can also pretty much find a unit about to head over to hook up with, any time you want to head over.
Again, I'm not sure how Active Duty works. I doubt they work like the NG.

Honestly probably yes but a lot depends on your MOS as well. If you're EOD or an Arabic translator then I am pretty sure that there would be a spot for you. If you are doing something less in demand (idk plumber comes to mind) then probably not.

Sometimes they ask for volunteers but be careful of what you ask for. Usaully they will ask for volunteers if they need them. Sometimes they just pick people for what ever reason.
